Cutt lower section in bite sized peices; drudge in egg and make a batter.I use Montreal staek seasoning flour bread crumbs ceyanne pepper garlic salt and peeper. Deep fry for a few min and you got one of the best tasting freshwater fish out there.

electric knife is a must.
1 Belly the fish (cut chest to butt)
2 Cut behind head until you get to spine and follow it to the tail.
3 Cut off fins and skin the two fillets
4 On one side of fish; about mid way cut along visible horizantal line. Keep upper section in 2 or 3 larger peices for this is where the y-bone is.
5 Next you will need a sharp fillet knife to cut out the remaining belly bone the the lower section.
